How are you using hidden fields?

I'll start:

To tell international office staff something you don't want/need to share with the submitter. One example: Funding amounts that are the result of an equation defined in the meta info in the hidden field based on inputs into numeric fields.

One example that comes to mind is to force an e-form to always go to the same second approver. I use this setup so students can request an access code, then the student's request comes to me and I can provide the access code via the second approver e-form. Upon submission, the student gets their code in the email "upon second approver submission."

This approach slightly beat out mail merge since I could log the request, send the code, and have record of it all in Sunapsis.
